NAPOLI TOMATO SAUCE
Re Umberto tomatoes from Amalfi Cost.
Our tomatoes sauce is thicker and tastier than any other, it’s just like a homemade sauce and is produced using only Re Umberto tomatoes from Amalfi Cost. It’s got a well-balanced savoury and acid flavour, and bright red pulp. The tomato Re Umberto names derives from a tribute to Umberto I of Savoy, King of Italy, who visited Naples in 1878 for the first time.
The tomato harvest is mostly by hand, because the use of machines in not possible due to the lack of infrastructure and the steep landscapes along the coast side.
The artificial reproduction of the rare species was performed through the conservation of seeds of some families of the region. Every summer, after harvesting, in the early morning, tomato jars were prepared for the winter period, a product that should have never been missing in the house and would last for the whole year. The term still used today is: "To do the bottles".
From bibliographical findings, the Re Umberto type is a variety from which San Marzano tomato originated years later and has been cultivated in Italy for over a century and sold by all the major seed companies.
